Vegan, Gluten Free Banana Bread

Ok, I’m no good with measurements, I usually just toss things together. This one is a real winner, but you have to be willing to improvise;-)

You will need: 5-7 very ripe bananas Couple drops vanilla oil Egg replacer worth 2-3 eggs About 1/3 cup agave nectar 11/2 tsp baking soda Spices to taste : cloves, nutmeg, cinnamon 1/2 tsp Low salt replacement 2 handfuls crushed walnuts

Blend all this together, then add the flour.

Gluten free flour: I used a combination of brown rice, tapioca and a mixed flour with quinoa, and a bit of regular white (potato-based) gluten free self rising flour Roughly 3 1/2 cups (batter should not be to dry, but gooey)

Oiled pan with grapes eyed oil and added 2 TBSP sunflower butter substitute and about a tablespoon grape seed oil

Result: super moist and delicious banana bread that still is light on the tummy.
