Vegan, Gluten Free Pumpkin Pie Muffins


An adaptation on a apple carrot recipe with the vitamix: 1 butternut squash baked whole in the oven 2 apples egg replacer (12 teaspoons +180ml water) These items go in the VITAMIX, blend on high 20 seconds

mix in bowl:2 cups flour (I used rice flour) 1/2 cup agave nectar 1/2 cup maple syrup 2 tsp. baking soda 1 1/2 tsp cinnamon 1 caradmon bud, skin removed 1/2 tsp nutmeg 1/2 tsp cloves 1 tsp salt

fold the vitamix wet ingredients into the other ingredients: bake as muffins at 180celcius for 20 min

optional, add raisins, nuts, oats (I added raisins per son’s request but regretted it! without the raisins it would taste exactly like a slice of pumpkin pie!)
